Two Ingredient Ice Cream? Stop It!

Some of Y'all read the post about my mother moving in with me for a while and how I'm not a good caregiver but I can rise to the occasion when it comes to nutrition and that's what I've been trying to do this week.

Mother needs a heart healthy/diabetes smart diet so I've been researching like crazy to find just the right path. Things do get a little tricky when you have to consider both of those restrictions but we've got a good start. 

The first day she was here I kept it super simple and prepared brown rice with stir fried carrots and zucchini. Now, by stir fry I don't mean I coated everything in oil and went to town. I used sunflower oil and lightly coated the bottom of the pan. In all honesty, you get a more flavorful taste using LESS oil. Less is more when it comes to oil and veggies. I just added seasonings and VIOLA! We had a simple, easy, heart/diabetic smart meal. 

Did I take pictures? Of course not. I wasn't thinking pictures. I'll try to do better. I did take some of the next recipe but they are blurry. Sorry, Y'all. 

One more share for today--- ICE CREAM! Yep, you read that right. I made ice cream and it was delicious! There are only 2 ingredients and so tasty, Y'all! Plus, it is heart/diabetic friendly. AND, Baby M couldn't get enough of it. 

I didn't realize she was going to love it so or I would have put her in the high chair because she must do it herself.
 Lesson learned.
 
All you do is slice 4 bananas, place them in a freezer container, and freeze them. Once they are frozen, put them in a super blender and blend until they are smooth and creamy- this will take a few minutes. Your blender really does need to be a super good one. I might try the food processor next time just because. 

Sorry this one is so blurry but she wouldn't be still. Look at that mouth, though. 
Once the bananas are the right consistency, add 2 tablespoons of peanut butter and blend some more. That's it! 

Ok, I did not wait for my banana slices to get fully frozen so my ice cream was more like very cold, very think pudding. But it was so good!

I'm going to get better about the pictures and I'll be posting more recipes. So far, Mother has been here 2 full days and I've made 6 new recipes and a delicious hearth/diabetic smart smoothie. 

Mother had an appointment with her respiratory DR Wednesday and he couldn't believe how improved she was since she left the hospital last Thursday. All reports are positive and she may not even have to be on the oxygen anymore. I'll keep Y'all posted on the progress. 

Meanwhile, we are still awaiting the arrival of Baby R. Which could be now or in another 13 days. The waiting is getting a bit intense BUT---

PRE-SEASON HAS BEGUN and as we all know, FOOTBALL makes everything better! Not that Baby R's mother would agree.

  1. I have all four boys here for five days! I think they would love that ice cream. Thank you for the link to the recipe. I am supposed to be looking up a recipe for lunch and I thought I would check in and see what you are doing today.
    It all sounds good. So glad your football has started. Well have a great weekend. I am so glad your Mom is doing so much better. That is wonderful. Take care or as all of those books I read, be sweet. :) My grandpa said that to me all of my life. It wasn't until I started reading those books that take place where you live that I realized where that phrase came from. Is the bridge all fixed now? Thanks for those links by the way. I would have freaked out. :)

    1. Yay! Oh, I hope they like it! Let me know if you make it and what they think. Another thing Marcy loves is when I bake sweet potato slices and when they come out of the oven, top them with peanut butter and a banana slice. I can't believe how quickly Mother is recovering. They don't even think she'll need to oxygen anymore. I just told her about you reading those books and she got so excited. She said come on over here and Y'all can have some book discussions while I drive Y'all around to show you the places. LOL The DOT hasn't finished painting the bridge yet but the mess is cleaned up. It took them into the next morning. My problem is I don't think they built those bridges on 526 for the amount of traffic we have. The port is working on a truck road that should help with that. We have nothing but idiots in control down here.

  2. Super about your Mother's improvement!!!!

    Banana peanut butter ice cream! Yessss!!!!!! Humans crave sweet and salty. This has that combo. total win!

    Only thing about the stir/fry I'd change is... We use just olive oil. Oh and we use some butter too. Natural foods is what we are attempting. :-)

    And your baked with toppings, sound delightful too!

    1. Isn't it? We're all amazed. She still gets tired at the end of the day but she is coming along quickly. That ice cream is so good. We were shocked. I don't use olive oil when I heat up oil as it loses it's nutritional value when heated. I'm getting ready to try avocado oil this weekend. We are finding that all of us are benefiting from these recipes. :) Thanks so much!

  4. I'm very happy to hear your mom is much improved!! Joe might like the banana and peanut butter 'ice cream'. I'm not much into bananas. Thanks for the recipe. He is on insulin now and we are both starting a low carb diet. Baby M is so darn cute! I'm still thinking August 10th! :)

    1. Check out my heart smart recipes board on Pinterest. Most of them are diabetic friendly as well and if they aren't they are easily made that way. My arrival date pick was the 12th or 13th but I'm thinking earlier now. Maggie thinks she's going in on the 10th and he'll be here on the 11th. The waiting is driving us crazy, wait, no it's Maggie who's driving us crazy. LOL
